Yesterday, I decided to cook up all of my food for the week. I’m usually in my kitchen at 6 am cooking elaborate meals for my day at work…which is not fun. I move very slow in the morning. I made paleo stew, egg muffins, onion soup, apple chips…and bread!! I’ll be honest, I’ve never made bread before. This was my first attempt. I used a recipe from Elana’s Pantry. I was skeptical at first because the recipe uses almond flour, flaxseed meal, and coconut. I didn’t know how all of the flavors would work together. But seriously…OMG. Even Gary loved it and was asking for seconds. I think next week I’m going to make two so that he can have one for the week. The bread is surprisingly light and fluffy and AMAZING with a little olive oil when it’s hot. You guys really need to trust me on this one…make it, make it now. Even non-paleo boyfriends will love it!


2 cups blanched almond flour
2 tablespoons coconut flour
¼ cup golden flaxmeal
¼ teaspoon celtic sea salt
½ teaspoon baking soda
5 eggs
1 tablespoon coconut oil
1 tablespoon honey
1 tablespoon apple cider vinegar


Place almond flour, coconut flour, flax, salt and baking soda in a food processor or mixing bowl and combine. I just used a mixing bowl and it turned out great!

Add in eggs, honey, oil, and vinegar
Pour batter into a  greased 7.5” x 3.5” loaf pan
Bake at 350 degrees for 30 minutes
Let cool 2 hours
Enjoy!! (Seriously— a little olive oil=heaven)

This recipe is great for those on a paleo diet and those not. It really is THAT good. If you have celiac like I do, why not make your own bread? Gluten free bread prices are climbing anyway. Food for thought.
